I had the absolute honor of competing in the Bacio Non Traditional Division. I thought I made a solid pizza featuring delicious Bacio cheese and lap cheong. Post- bake, I topped it with a ton of ingredients: pickled mango/serranos, peanuts, chili crisp honey, lime zest, basil and mint and some Bacio cheese whipped in heavy cream to tame the spices.

My theories as to why it palced 10th/30th- there may have been too many things going on OR I didn't get the bake I wanted (had more flop than I had practiced). More details will be learned after I get my feedback, but overall I'm glad I competed and showed up for this. It was a beauty of a pizza, IMO.
