Making the "Shaka" - Hawaiian Inspired Pizza On The Ooni Koda 16

According to a convo I had with Ben from Pizza Supreme Being, spam and pineapple are more authentic than your traditional Hawaiian pizza.

Funny enough, I LOVED Hawaiian pizza and Spam growing up so I thought let's rock this. Ben also throws on jalapeños on his pies and I'm like fam, say less. I am a spice head for sure and to spice this up even more, I'm finishing it off with some Ilroy's Hot Sauce.

Dough:
Feed starter 1:2:2
200g starter PAST peak for stronger flavors
Balanced mix:
500 Grams of Caputo Super Nuvola
1500 Grams of Caputo Pizzeria
63% Hydration
2.5% Oil
2.5% Salt
7 Hour Bulk Ferment
24 Hour Cold Ferment
4 Hour Proof
